Simple and Delicious Scones Recipe

I’ve been making these scones for a long time; this is an old recipe courtesy of the Country Women’s Association. They are simple to make and ready in just 30 minutes. Fresh from the oven, they’re delicious, often served with jam and cream.

Ingredients:

  • 4 cups self-raising flour (or 4 cups plain flour + 8 teaspoons baking powder)
  • A good pinch of salt
  • 1 teaspoon sugar
  • 300ml milk
  • 300ml cream

Instructions:

  1. Sift the flour into a bowl. Add salt and sugar.
  2. Measure and pour in the milk and cream, mixing lightly until just combined. The dough should be wet and sticky. You may need to add more cream or milk to achieve this consistency.
  3. Turn the dough onto a lightly floured surface. Sprinkle some flour on top and shape the dough into a 1-inch-high circle.
  4. Using a sharp cutter, cut the scones into rounds (no twisting—just a straight up and down cut).
  5. Place the scones on a paper-lined baking tray, ensuring they touch each other to help them rise. Brush the tops with cream or milk.
  6. Bake in a preheated oven at 200°C (400°F) for 15-20 minutes, or until they spring back slightly when pressed.
  7. Let the scones cool slightly on a wire rack. Once cool enough, separate them gently and slice.
  8. Serve with butter, jam, and cream.
