4 Fresh Sanderson Farms® Chicken Leg Quarters
2 tablespoons Zaatar spice rub
Salt and pepper to taste
Molasses Glaze
1 cup molasses
1 teaspoon lime juice
1 tablespoon Soy Sauce
1 tablespoon Zaatar spice rub
Salt and pepper to taste
Remaining Dish Ingredients
2 cups carrots, cleaned and cut into 1” chunks
1 cup shallots, halved
1 tablespoon cilantro
1 tablespoon scallions
Directions
Zaatar Broiled Chicken
Combine chicken leg quarters, Zaatar spice rub, and salt and pepper in a Ziploc bag or Tupperware container. Shake well to evenly coat the chicken.
Molasses Glaze
In a non-reactive bowl, combine all glaze ingredients: molasses, lime juice, soy sauce, Zaatar spice rub, salt, and pepper. Stir until well blended.
Set aside for glazing the chicken during the final broiling step.
