Ingredients:

  • For the Chicken Meatballs:
    • 1 lb (450g) ground chicken (or turkey)
    • 1/2 cup shredded cheese of your choice (mozzarella, cheddar, provolone, etc.)
    • 4 cloves garlic, grated + 2 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • 1/2 teaspoon red crushed chili pepper flakes (optional)
    • 1 crumbled bouillon cube (optional)
    • Salt and fresh cracked black pepper, to taste
    • 1/2 cup fresh chopped parsley (or cilantro)
  • For the Garlic Butter Sauce & Cauliflower Rice:
    • 3 tablespoons butter, divided
    • Juice of 1/2 lemon
    • 1 tablespoon hot sauce (Sriracha recommended)
    • 1/2 cup chicken stock
    • 1 medium cauliflower head, grated (or use a packet of riced cauliflower)

Directions:

  1. Prepare the Cauliflower Rice:
Start by preparing the cauliflower rice. Use a large grater or food processor to grate the cauliflower into rice-sized pieces. Transfer the cauliflower rice to a shallow plate, add 1/2 cup of water, and cook it covered in the microwave for 4 minutes.
  2. Make the Chicken Meatballs:
In a large mixing bowl, combine the ground chicken (or turkey), shredded cheese, grated garlic, Italian seasoning, crumbled bouillon cube, chili pepper flakes (if using), chopped parsley (or cilantro), and a pinch of black pepper. Mix everything together thoroughly, using your hands or a fork. Then, form the mixture into medium-sized meatballs and arrange them on a plate.
  3. Cook the Chicken Meatballs:
Heat 2 tablespoons of butter in a large skillet over medium-low heat. Place the chicken meatballs in the skillet and cook for 8-10 minutes, turning occasionally, until they are golden brown on all sides and cooked through. While cooking, baste the meatballs with the butter and juices in the pan. Once done, remove the meatballs and set them aside on a clean plate.
  4. Prepare the Garlic Butter Sauce:
In the same skillet, melt the remaining 1 tablespoon of butter. Add the lemon juice, chicken stock, hot sauce, minced garlic, and red pepper flakes (if desired). Let the sauce cook for 3-4 minutes, stirring occasionally, until it slightly reduces and thickens. Adjust the seasoning with salt and pepper to taste. If you like, garnish with more parsley or cilantro.
  5. Assemble the Meal Prep:
Divide the cauliflower rice evenly between your meal prep containers. Place the cooked chicken meatballs on top of the rice. Drizzle a bit of the garlic butter sauce over the meatballs and cauliflower rice, or serve the sauce separately in small containers for easy reheating.
  6. Store and Enjoy:
These garlic butter chicken meatballs with cauliflower rice can be stored in the fridge for up to 4 days. Simply reheat in the microwave when ready to eat and enjoy this satisfying and flavorful meal!

This recipe is the perfect balance of protein and veggies, making it an excellent option for meal prepping healthy lunches or dinners throughout the week. With rich garlic butter flavor and the freshness of cauliflower rice, this meal is both delicious and filling!
