Ingredients

  • 14 oz (400g) farfalle pasta
  • 3 tablespoons olive oil
  • 2 medium onions, sliced
  • 3–4 cloves garlic, minced
  • 14 oz (400g) mushrooms, sliced
  • 10 oz (300g) fresh spinach
  • 1/2 cup (125ml) low-sodium vegetable broth
  • Fresh cracked pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1/2 cup parmesan cheese, grated
  • 3/4 cup heavy whipping cream (adjust to taste)
  • 1 teaspoon red chili pepper flakes (optional)

Directions

  1. Cook Pasta: Boil the pasta in salted water according to package instructions until al dente. Drain and set aside.
  2. Sauté Vegetables: Heat 1 tablespoon olive oil in a large skillet. Add the sliced onions and sauté for 2-3 minutes until translucent and lightly browned. Remove and transfer to a plate.
  3. Add the mushrooms to the skillet and sauté for about 3 minutes until golden brown. Add more olive oil if needed. Transfer mushrooms to the plate with onions.
  4. Toss the spinach into the skillet and cook for 2 minutes until wilted. Season with salt and pepper. Remove spinach and drain excess liquid, placing it on a separate plate.
  5. Prepare Sauce: In the same skillet, heat the remaining olive oil. Add minced garlic and sauté for 30 seconds until fragrant. Deglaze the skillet with vegetable broth. Stir in heavy cream, grated parmesan, chili flakes (if using), and Italian seasoning. Simmer for 2 minutes, stirring frequently until the sauce thickens slightly.
  6. Combine Ingredients: Return the mushrooms, onions, and spinach to the skillet. Add the drained pasta and toss everything together until evenly coated with the sauce. Adjust seasoning if necessary.
  7. Serve: Garnish with extra parmesan cheese, chili flakes, or fresh cracked pepper. Serve hot and enjoy your creamy, flavorful one-pot pasta!

This dish is a lifesaver for weeknight dinners. It’s hearty, creamy, and full of delicious flavors that will have everyone coming back for seconds! Perfect for vegetarians and easily adaptable to your taste.
