Budget-Friendly Snacks Your Kids Will Love

How expensive are groceries these days? It’s crazy. Today, I’m bringing you three delicious, cheap, and easy snacks that kids (and even big kids) will love. Let’s get cooking!

1. Savoury Toast (Pizza Toast)
This recipe is a classic! You can make the mixture ahead of time and store it in the fridge until you’re ready to use it.
In a bowl, whisk two whole eggs until well combined. Add about half of a 250g packet of chopped bacon ($3.50), 1 cup of grated cheese (cheddar or pizza blend works best), 2 teaspoons of Worcestershire sauce, a pinch of salt, and ¼ teaspoon of cayenne pepper (optional).
Mix everything thoroughly. Butter some bread (Turkish rolls from Aldi are a great choice at 60 cents each), then evenly spread the mixture on top.
Place on a paper-lined baking tray, and fill in any gaps with extra cheese. Bake in a preheated oven at 180°C (350°F) for about 20 minutes, or until golden brown. Cut in half and enjoy!

2. Pinwheels
Puff pastry is incredibly versatile and easy to use. You can fill them with whatever you have on hand—think cheese and Vegemite, or ham and pineapple.
Take as many sheets of puff pastry as you need, let them thaw slightly (about 5 minutes), and spread with tomato paste or pizza sauce. Top with shaved ham and some chopped onion. You can also add chopped chorizo for extra flavor.
Roll up the pastry, remove the plastic backing, and lightly flour your workbench to make it easier to roll. Cut into 1-inch slices and place on a paper-lined baking tray. Sprinkle with grated cheese and bake in a preheated oven at 200°C (400°F) for about 20 minutes, until puffed up and golden brown.

3. Pikelets
These little pancakes are cheap, easy, and delicious both warm and cold.
In a bowl, whisk 1 egg and 1 tablespoon of sugar until combined. Add 1 cup of self-raising flour, ¼ teaspoon of bi-carb soda (optional), and 200ml of milk. Mix in 1 teaspoon of vinegar to make the pikelets fluffy. Stir in 1 tablespoon of melted butter, and don’t worry if the mixture has some lumps.
Heat a nonstick pan over moderately low heat, add a small amount of butter, and spoon the mixture into the pan. Cook each pikelet for 2-3 minutes on the first side, then flip and cook the other side for about 1 minute. Serve with butter and jam, or store any leftovers in the fridge for lunchboxes.
