Creamy Salmon with Spinach and Tomato served with Toasted Rice

This delicious and easy recipe combines crispy salmon fillets, sautéed garlic, fresh spinach, and sweet cherry tomatoes, all simmered in a creamy Parmesan sauce. Paired with lightly toasted rice, it’s a meal that’s both comforting and flavorful.

Ingredients:

  • 2 salmon fillets
  • Salt and black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves of garlic
  • 150 g (1 cup) cherry tomatoes
  • 2 handfuls baby spinach
  • 120 ml (½ cup) heavy cream
  • 30 g (¼ cup) grated Parmesan cheese
  • Fresh herbs (such as basil or parsley)
  • 1/2 tbsp unsalted butter
  • 1/2 tsp salt
  • 1 1/2 cup (350 ml) hot water

Instructions:

  1. Begin by seasoning the salmon fillets with salt and black pepper. Heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a pan over medium heat. Add the fillets and fry for about 4 minutes on one side, or until the skin is crispy and caramelized. Turn the fillets over and cook for another 2 minutes. Once done, remove the salmon from the pan and set it aside.
  2. In the same pan, add 2 finely chopped garlic cloves and sauté for 1 minute, until fragrant. Halve 150 g of cherry tomatoes and add them to the pan. Season with salt and pepper, cooking briefly until the tomatoes soften. Add 2 handfuls of baby spinach and cook until wilted, about 2 minutes.
  3. Pour in 120 ml of heavy cream and stir in 30 g of grated Parmesan cheese. Add some finely chopped herbs like basil or parsley for an extra layer of flavor. Reduce the heat to low and let the sauce simmer for a minute. Return the salmon fillets to the pan and allow them to simmer gently in the sauce for another 2-3 minutes.
  4. In a separate pan, melt 1/2 tablespoon of unsalted butter over medium heat. Add the rice and sauté for 2-3 minutes, stirring constantly, until the rice is lightly toasted and fragrant. Add 1/2 teaspoon of salt. Pour in 1 1/2 cups of hot water, bring it to a boil, then lower the heat to a simmer. Cover the pot and cook for about 10 minutes. Once done, uncover the pot and fluff the rice with a fork.
  5. Plate your creamy salmon with the toasted rice, drizzle some of the sauce over the top, and enjoy this comforting dish!
