Ingredients
For the Steak and Potatoes:
- 1 1/2 lb (650g) flank steak (or ribeye, tenderloin, strip loin), sliced against the grain
- 1 1/2 lb (650g) baby yellow potatoes, quartered
- 1 tablespoon olive oil
- 3 tablespoons butter, divided
- 5 garlic cloves, minced
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh oregano, chopped
- Salt and freshly cracked pepper, to taste
- Crushed red chili pepper flakes (optional)
For the Marinade:
- 1/3 cup soy sauce (or coconut aminos for paleo/gluten-free)
- 1 tablespoon olive oil
- 1 tablespoon hot sauce (e.g., Sriracha)
- Freshly cracked pepper
Directions
- Marinate the Steak:
In a large bowl, mix the steak strips with soy sauce, olive oil, hot sauce, and cracked pepper. Let the steak marinate while you prepare the potatoes. - Cook the Potatoes:
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the quartered potatoes and cook for about 8–10 minutes, stirring occasionally, until golden brown and fork-tender. Remove the potatoes from the skillet and set aside. - Sear the Steak:
In the same skillet, add the remaining 2 tablespoons of butter, minced garlic, red chili flakes (if using), and fresh herbs. Arrange the steak strips in a single layer. Cook for 1 minute per side, or until browned to your liking. Reserve the marinade and add it to the skillet in the last minute of cooking for extra flavor. - Combine Steak and Potatoes:
Return the cooked potatoes to the skillet. Toss gently to coat everything in the garlic butter sauce and heat through. Adjust seasoning with salt and pepper as needed. - Serve and Garnish:
Serve the steak and potatoes hot, garnished with additional fresh herbs, chili flakes, and a sprinkle of Parmesan cheese if desired.
