Garlic Butter Steak and Potatoes Skillet

Ingredients

For the Steak and Potatoes:

  • 1 1/2 lb (650g) flank steak (or ribeye, tenderloin, strip loin), sliced against the grain
  • 1 1/2 lb (650g) baby yellow potatoes, quartered
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 5 garlic cloves, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh oregano, chopped
  • Salt and freshly cracked pepper, to taste
  • Crushed red chili pepper flakes (optional)

For the Marinade:

  • 1/3 cup soy sauce (or coconut aminos for paleo/gluten-free)
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce (e.g., Sriracha)
  • Freshly cracked pepper

Directions

  1. Marinate the Steak:
    In a large bowl, mix the steak strips with soy sauce, olive oil, hot sauce, and cracked pepper. Let the steak marinate while you prepare the potatoes.
  2. Cook the Potatoes:
    Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the quartered potatoes and cook for about 8–10 minutes, stirring occasionally, until golden brown and fork-tender. Remove the potatoes from the skillet and set aside.
  3. Sear the Steak:
    In the same skillet, add the remaining 2 tablespoons of butter, minced garlic, red chili flakes (if using), and fresh herbs. Arrange the steak strips in a single layer. Cook for 1 minute per side, or until browned to your liking. Reserve the marinade and add it to the skillet in the last minute of cooking for extra flavor.
  4. Combine Steak and Potatoes:
    Return the cooked potatoes to the skillet. Toss gently to coat everything in the garlic butter sauce and heat through. Adjust seasoning with salt and pepper as needed.
  5. Serve and Garnish:
    Serve the steak and potatoes hot, garnished with additional fresh herbs, chili flakes, and a sprinkle of Parmesan cheese if desired.
