  • 1/2 cup onion, finely diced

  • 3 cloves garlic, halved
  • Salt and freshly cracked pepper, to taste
  • 1 can (15 oz or 425g) diced tomatoes (undrained) or diced fresh tomatoes
  • 1 can (8 oz or 225g) tomato sauce
  • 1 teaspoon Italian seasoning
  • 5 cups (1 1/4 liters) beef broth
  • 1/2 cup diced green beans (fresh or frozen)
  • 2 tablespoons chopped fresh parsley (optional)
  • Shredded cheese (optional, we recommend sharp cheddar)

Directions

  1. Begin by heating olive oil in a large pot over medium-high heat. Once hot, add the diced onion and celery. Cook for 5-6 minutes, stirring occasionally, until the vegetables soften.
  2. Add the ground beef to the pot and season with salt and freshly cracked pepper to taste. Break up the meat with a spoon as it cooks. Continue to cook until the beef is browned and mostly cooked through.
  3. Add the halved garlic cloves to the pot and cook for an additional 30 seconds, allowing the garlic to release its aromatic flavors.
  4. Stir in the canned diced tomatoes (with juices), tomato sauce, Italian seasoning, and beef broth. Bring everything to a simmer and let it cook for 25-30 minutes, allowing the flavors to meld together. Taste and adjust seasoning with salt and pepper if necessary.
