How to Make Delicious Chicken Strudel with My Mum

This is my beautiful mum, and she and dad are visiting me for 4 weeks. While she’s here, she’s promised to show me one of her signature dishes: chicken strudel. It’s absolutely delicious, and all the family requests it when they visit. Let’s get started!

Ingredients:

  • Chicken breast
  • Sweet potatoes
  • Spring onions
  • Cream
  • Cornflour
  • Filo pastry
  • Fresh spinach leaves
  • Grated cheddar cheese
  • Butter (or oil, but butter is preferred for flavor)
  • Sesame seeds

Instructions:

  1. Prep the chicken: Cut the chicken into small pieces, making sure it’s nice and white when cooked. Don’t aim for color when frying the chicken—just cook it through.
  2. Cook the vegetables: Roast the sweet potatoes, and cook the spring onions in a bit of butter with some salt and pepper. Don’t overlap the vegetables.
  3. Prepare the creamy filling: Add cream to the spring onions, bring it to a boil, then let it simmer for about 15 minutes. Make a cornflour slurry by mixing cornflour with cold water, then add it to the cream to thicken it.
  4. Cool down: Once the creamy mixture is thickened, let it cool down before placing it in the fridge for at least 3 hours.
  5. Assemble the strudel: When the filling has cooled, lay down one sheet of filo pastry, lightly coat it with butter, and add another sheet. Repeat this until you’ve used three sheets. Layer the sweet potatoes, chicken, spinach, and cheese. Then fold the pastry over and roll it up.
  6. Bake: Sprinkle sesame seeds on top and bake until golden and crispy. If you want, you can use puff pastry for a gluten-free version.
